In my opinion, the only way to learn a language well is persistently practicing and being in contact with it the most you can. Sure the method might make a difference too, but the most important is to keep it live on your brain by practicing regularly a few days a week or even every day if you can. I'm saying this for personal experience and from hearing other learners and specialists say, the key is being in contact with the language regularly. That's why spending sometime in a country where they speak the language you want to learn is the best way to learn it: you're in contact with the language every single day for many hours.
I learnt french in classes for many years back in my country, and I already knew the language very well, all the grammar rules and stuff, but I only became really fluent in french when I came to live in France. After 4 years living here I would say that I already forgot many grammar rules or unusual conjugations that I used to know, and although I might make some grammar mistakes now and then, I speak it way better than when I knew all the theory. It just becomes automatic, the sentences come out naturally without you even thinking, and for me that is what fluency is. I think in the end putting it into practice is the most important thing, more so than thoroughly learning grammar. I know many people here in France who speak fluently (they can understand everything others say and express everything they want), even though their grammar might poor. On the other hand, many people know their grammar and vocabulary perfectly but can't engage in a conversation, speak promptly and naturally, etc.
Same goes for english, many people (including myself) learnt it in school or language classes, but the fact that we are in contact with it everywhere and all the time in the internet, films, tv, etc. just makes you much better at understanding and expressing yourself in it than just going to classes twice a week, even if your grammar and orthography are poor.
So what I mean is, stick with what will make you work with frequency. If you have a lot of motivation and discipline learning by yourself can be very good. If not, a formal classroom may be a good option because it assures you that you will work the language at least X times a week.

If I were to pick...it'll probably be either French or Japanese.

I'd pick French because it'll help me find a job here in Canada :(

And I'd pick Japanese because reading subtitles in anime sucks!

Actually a third pick would probably be German. So I can scare people in random cafe's and sound like a nazi

As long as you don't do the latter in Germany lol I heard you can get into some pretty deep shit if you mention anything to do with nazism there.

I'm learning Japanese myself for exactly the same reason! Anime can get really picturesque and it's annoying to have to constantly look at subtitles.

As French is a language full of exceptions, some exceptions to this include hélicoptère, coléoptère, semblable, père, dictionnaire, garage, annuaire, astronome, etc., all masculine.

To make it even more complicated, in Quebec french you'll sometimes see some words have unstable gender in the spoken language. This means you might hear "une" avion(f), "un" affaire(f) (less frequent), or the annoyingly ubiquitous "une" autobus(m) (some native speakers honestly believe the latter to be correct). I think I've heard gender instability even applied to a word to distinguish between two meanings or connotations of it, but I wouldn't remember what it was.

I actually am considering learning mandarin. I would love to move Singapore or China. But it's expensive. I'm Turkish and our economy is in a pretty sh#t shape. I guess no chinese for me.
